Recipe: Mushroom Pie

Base:
150 g butter
3 dl spelt flour
½ tsp salt
1 tbsp water
Filling:
1 liter Cantarell, Oyster or any other mushroom
1 onion
3 eggs
2 dl milk
1 dl single cream
3 dl grated cheese
1 tsp salt
½ tsp pepper
Mix the Flour into the butter, using your fingers, and add the Water and Salt. Leave to cool in fridge for about an hour.
Take out of fridge and roll out the dough to fit your pie form (this recipe is best suited for a 9 inch (24 cm) pie dish. Fit the dough into the pie dish and cook for 10 mins at 200 degrees.
Fry the onion until golden and add the mushrooms (chopped to your choice). Add the Mushrooms and Onion into the pie shell.
Whip toghether the Eggs, Cream, Milk, Salt and Pepper. Add the Cheese and pour into shell to cover the Mushroom and Onion.
Cook in oven for approx 35 mins at 200 degrees.

2 kilo ham (or any salted meat)
Boil (gently) until tender - cover with lid
When done - keep the broth
The dumplings will take about an hour to make.
5 cups peeled raw potatoes, grated
6 cups flour 9 tbsp (flat) baking powder
Add a little more salt to the broth if not salty. (yes - you have to taste it)
Mix flour, baking powder and salt together.
Add mixture to the potatoes. Mix ingredients until doughie.
Take some of the dough, about the size of a tennis ball, roll in flour to absorb some of the stickiness, shape into round dumplings with your hands- drop into boiling ham broth.
Boil very gently (with lid) for 1 hour, turning dumplings for more even cooking.
Serve with ham broth poured over the dumplings on plate along with the ham.
Serve dumplings with butter - or cream
Recipe: Millet Burgers (vegetarian)
1 Onion, finely chopped
1 small cup Millet
2 Carrots, grated
2 small cups of Veggie Stock
1 tbs dried Thyme
Fresh Parsley
1 tsb Sesame Seed
4 tsb Sunflower Seeds
Salt
Pepper
Chilli Flakes
3 small Tomatoes
2 mashed Potatoes

Cook Onion in Olive Oil ’till golden. Add the Millet and the two Carrots and give t a stir.
Then add the Veggie Stock and Thyme before you stir and let it simmer for 20 mins.
Add the Parsley, Sesame Seeds, Sunflower Seeds and Salt Pepper and Chilli flakes to taste.
Finally add the Tomatoes and Potatoes.
Let this cool down so that you can shape the Burgers in your hands.
Fry in a pan with Olive Oil and butter
